Ingredients 

  • 2 medium-sized potatoes
  • 1 cup white onion, diced
  • 3 tbsp butter
  • 4 cups chicken stock/ broth
  • 2 tbsp flour
  • 2 cups water
  • 1 1/2 cup mashed potatoes
  • 1/4 cup cornstarch
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 1 cup half and half
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1/2 cup cheddar cheese
  • 1/2 fried bacon, or grilled chicken diced for garnishing

Directions 

  1. Preheat your oven to 400F and bake whole potatoes for 1 hour until soft. Remove the potatoes and cool.
  2. While the potatoes are cooling, prepare the soup. Take a large saucepan, and add butter and onion. Saute the onion until golden brown.
  3. Add flour to the onions and make a roux.
  4. Add chicken stock, water, mashed potatoes, spices, and herbs to the roux and reduce the heat.
  5. Simmer for 5-10 minutes. Mix cornstarch into 2 tbsp of water, and add it to the mixture.
  6. Stir continuously to avoid lumpy soup.
  7. Cut the potatoes that you baked in the oven and remove their skin.
  8. Chop the potatoes into small chunks.
  9. Add chopped potatoes and half-and-half into the soup and bring it to a boil. Let it simmer for 15 minutes or until the soup is thick.
  10. Spoon the soup into a serving bowl, and top it off with shredded cheese, and crumbled bacon. Serve hot.
