Easy Almond Pulp Cookies [100% Vegan]

Today I am going to share the easiest almond pulp cookie recipe that you can try at home. These cookies are chewy and delicious.

Almond pulp cookies are a healthy snack that you can make for your kids. The best part is that this recipe is very easy and it requires a few ingredients only. The entire process only takes about half an hour and you have a plate full of warm cookies straight from the oven.

The traditional recipe is plain, but you can make things fun by adding chocolate chips and raisins. These cookies have a high shelf life which is why I like to make a large batch of cookies and store them in an airtight jar.

It’s a great addition to kids’ lunch boxes and a light snack with afternoon tea or coffee. This recipe is 100% vegan, which makes it a great snack for vegetarians.

What are the Main Ingredients of Almond Pulp Cookies

  • Almond pulp
  • Coconut 
  • Maple syrup
  • Chia egg 
  • Dark chocolate chips (optional)

If you want a non-vegan recipe, you can use normal eggs, but vegans can substitute that with chia seeds egg. It’s simple to make.

To make a chia egg, all you need to do is add 1tbsp of chia seeds to 2.5 tbsp of water. Mix it in a small bowl, and leave it for about 5 minutes. The mixture should be thick now like a gel. You can now use it in your recipe in place of eggs.

I’m a big fan of chocolate, so I have added dark chocolate chips to the cookies. You can also add dried raisins or cranberries. You can even add normal dark chocolate or milk chocolate if you are out of chocolate chips.

Almond Pulp vs Almond Flour/ Almond Meal

Almond pulp is not like Almond meal or Almond flour. For this cookie recipe, I don’t recommend using either and sticking to the almond pulp.

Almond pulp is wet, so it gives the cookies a crispy edge and a moist and soft center. If you use almond meal or flour instead, your cookies will be too dry and cracked.

Almond Pulp Cookies Recipe 

Try this recipe to make moist and chewy cookies made from almond pulp and a handful of other ingredients.

Ingredients

  • 1 cup almond milk, wet
  • 1 cup coconut, shredded
  • 1 chia egg (as discussed above)
  • 1/3 cup maple syrup
  • 1/2 cup dark chocolate chips

Directions 

  1. Preheat the oven to 350F.
  2. In a medium bowl, mix all the ingredients. Make sure the coconut is shredded into small, thin pieces.
  3. Chill the dough in the refrigerator for at least an hour.
  4. Line the baking sheet with parchment paper and spray with oil. You can use coconut oil.
  5. Scoop the cookie dough and lay it on the sheet in small balls.
  6. Bake the cookies for about 20 minutes, or until golden brown.
  7. Put them on a cooling rack, or enjoy warm.
